Nuala Harding, Athlone Institute of Technology
Nuala Harding was awarded a Bachelor of Education in Home Economics
and taught originally at Secondary School level. She joined Failte
Ireland (formerly CERT) in Limerick. She was appointed External
Examiner and Supervisor of Correctors in Professional Cookery with
the National Tourism Certification Board (NTCB). Having successfully
completed advanced courses in Pastry work and Kitchen Management,
Nuala took up her current position as lecturer in the Department
of Hospitality, Tourism & Leisure Studies in Athlone Institute
of Technology. She is a Licensed Trainer with the National Hygiene
Partnership and the Environmental Health Officers Asssociation and
has specialised in Food Safety. She successfully completed the Postgraduate
Diploma in Third Level Learning and Teaching with DIT and intends
to complete the Masters programme in the forthcoming academic year.
